Paolo Fresilli and the Italian Chef’s Federation
After 30 years of experience as a chef in different countries and on renowned cruise liners, Paolo Fresilli worked in restaurant in Dublin and County Louth before he decided to open his own restaurant in Enniscorthy.
President of the Italian Chef’s Federation in Ireland, he is an active member of this international association that understands their role as ambassadors of the Italian food, wine and lifestyle.

Via Veneto, Dolce Vita and the eternal city of Rome
A visit at Via Veneto Restaurant takes you back into the time of famous Italian movies, as Paolo Fresilli is a cineaste who displays his collection of Italian movie history throughout the restaurant.
No surprise then, when choosing a name for his restaurant he was inspired by one of the most legendary Italian movies, Fellini’s ‘Dolce Vita’, featuring Marcello Mastroianni and the blond bomb shell Anita Ekberg, who became famous after her bath in the Trevi fountain. While this movie started of as ‘Via Veneto’, ‘Dolce Vita’ (sweet life) was the final title as it came to the cinemas in the 60s.
Via Veneto in Rome remains a popular place in Rome with its beautiful architecture, restaurants, hotels, cafes and shops.
